Sara and Tim joined us for Easter brunch at our apartment today. I made a family favorite, Egg casserole with bacon and Sara brought over a delicious monkey bread. Oh how I love monkey bread! These are wonderful brunch recipes to make for weekend company or for a holiday/family brunch. I hope everyone had a wonderful Easter with family or friends!
Brunch Egg Casserole with Bacon
Ingredients: (note: The casserole must sit for 12 hours before baking.)
10 slices hearty white bread such as Pepperidge Farm Hearty White, remove the crusts and cut into bite-size cubes
6 eggs
1/2 lb. sharp white cheddar cheese, grated
1/2 lb. Muenster cheese, sliced like deli squares
1 lb. bacon, fried crisp, then torn into tiny pieces after cooling
3 cups skim milk
1/2 tsp. salt
Directions:
Grease a 9x12 glass dish with Pam. Layer first the bread cubes, then the grated cheese, then the sliced Muenster cheese, and finally the bacon on top. Beat the eggs, salt and milk in a small bowl. Pour the egg mixture over the layers slowly, letting it seep in.
Cover and let stand 12 hours in the refrigerator. Bake covered with foil at 350 for 45 minutes. Then, uncover and bake for an additional 15 minutes. Let it set 5-10 minutes before you cut it. Serves about 12.
