Summer is the time for burgers on the grill but regular burgers can get old after awhile. To spice up your life a little bit, here is a delicious recipe for burgers with feta, fresh spinach, tomato and green onion. My mom made me these burgers years ago for me, and I came across the recipe today while planning meals for the weekend, remembering how different and good they were. This recipe would probably be good with ground turkey as well, if you prefer something a little more healthy than beef. You can top it with whatever you like, just not cheese, because you have the feta cheese inside the burger. You could put more feta on top though if you REALLY enjoy feta! :)
Ingredients:
1 pound ground beef (I used 85/15)
1 green onion, chopped
1/2 cup spinach from bag, chopped
1/4 cup Roma tomatoes, chopped
1/4 cup feta cheese crumbled
1/2 tsp salt
1/2 tsp pepper
Directions:
Mix all ingredients together in a bowl and make into patties. I made 4 patties but if you like your patties larger, it may only make 3. Grill until slightly pink. Top with whatever you like, extra feta, ketchup, lettuce, tomato, red onion, etc. Eat with or without a bun.
