One thing I love about summer is how simple it is to prepare healthy meals. Summer is all about healthy salads and light, simple flavors. This salad fits that description perfectly. It has protein from the black beans, good veggies, fresh herbs, and a light dressing of olive oil and fresh lemon juice. We had it with grilled chicken tonight making for a very easy and healthy meal. The recipe doesn't include feta cheese but when I sat down to eat, I thought it might be a good addition and it was! You could definitely add some in for more tangy flavor. Only a month left of summer so be sure to make this soon! Enjoy!
Ingredients:
2 1/2 - 3 cups black beans (two cans)
1 red bell pepper, cut into 1/4 inch dice
3 green onions, white bulb and 3 inches of the green, sliced into 1/4 inch rounds
2 ripe plum tomatoes, seeded and cut into 1/4 inch dice
6 Tablespoons olive oil
3 Tablespoons fresh lemon juice
5 Tablespoons chopped cilantro
1 tsp. coarsely ground pepper
3/4 tsp. salt
Directions:
Combine all of the ingredients in a medium bowl and toss gently. Refrigerate, but let the salad rest loosely covered at room temperature for at least an hour before serving.
