The Box Tree salad is one of my favorite salads. I love the flavor combination of tart-sweet apples, crunchy walnuts, and the pungent blue cheese. The dressing is wonderful too! This recipe comes from my hometown church cookbook from many years ago (has some of the greatest recipes). The original creator of this salad modeled this salad after one that is served at The Box Tree restaurant in New York City. It has become a family favorite for Thanksgiving, Christmas and other special occasions. If you are looking for a salad to make for Thanksgiving, I highly recommend this one!
1 bunch red leaf lettuce 1/2 c. salad oil
1 bunch Boston or bibb lettuce 3 T. red wine vinegar
1/3 cup walnut halves 1/2 tsp. salt
3 oz. blue cheese 2 tsp. Dijon mustard
1 Delicious apple Dash of Tabasco sauce
1 Granny Smith apple Freshly ground pepper
Arrange greens on individual chilled salad plates. Sprinkle the walnut halves over the greens. Place a mound of blue cheese in the center of each plate or you can crumble the blue cheese over the salad. Arrange thin slices of the unpeeled red and green apples in pinwheels around the plate. Combine all remaining ingredients in a screw top jar and shake well. Drizzle 1 to 2 tablespoons of dressing over each salad and serve immediately. Serves 6.
