This recipe for artichoke dip is the easiest and most delicious appetizer. Really, what's not to like about cheesy goodness!? It's not the best thing for you but to lighten it up a little bit, I use light mayonnaise and 1/3 less fat cream cheese. I like to serve it with bite size Tostitos or toasted baguette. It will be a hit at your next party or holiday get together!
1 can artichokes, drained and chopped
1/2 cup mayo. (can you light mayo)
1 cup mozzarella cheese, shredded
8 oz. package cream cheese (can use 1/3 less fat)
1/4 cup grated parmesan cheese
Mix ingredients in a small bowl. Make sure cream cheese is at room temperature to make it easier to mix. Bake at 350 degrees for 20-25 minutes or until bubbly and hot. Serve with crackers, toasted baguette, or Tostitos.
