I'm always looking for different ways to make the average salad more exciting. I actually found this recipe in an airline magazine on our way to Iowa back in June. I know that's totally random but I thought hey this looks good! The homemade balsamic vinaigrette was delicious, much better than store bought versions. I think I will make it from scratch rather than buying it. The toppings were just what i like as well. You can never go wrong with blue cheese in a salad. The sharpness of the blue cheese with the sweetness of the craisins is the perfect combination. I also got to try out my KitchenAid immersion blender again. I'm really enjoying this handy kitchen tool!
Makes 1 cup
4 ounces olive oil
3 ounces balsamic vinegar
2 cloves garlic, minced
1/4 tsp. salt
1/8 tsp black pepper
1.) Combine all ingredients except olive oil in bowl.
2.) Slowly drizzle in oil while using a small immersion blender, food processor or whisk to create emulsion.
2 1/2 cups fresh spinach
1/4 cup craisins or any dried cranberries
1/4 cup crumbled blue cheese
1/4 cup toasted pine nuts
1.) Toast the pine nuts in a small skillet with a little oil being careful not to burn them.
2.) Toss spinach with desired amount of balsamic.
3.) Top with pine nuts, craisins and blue cheese.
