This is one of my favorite grilled sandwiches and has become a favorite of TC's too! My mom has made this sandwich for me ever since I was little. I'm not a fan of cold, plain tuna, but I love it warm in this grilled version which includes Swiss cheese, apple and celery.
6 1/2 oz. can white tuna, drained
4 oz. (1 cup) shredded Swiss cheese
1/2 c. chopped celery
1/2 c. finely chopped unpeeled red apple
1/4 c. light mayonnaise
1/4 c. plain yogurt ( I use non-fat)
1 T. finely chopped parsley ( I usually omit this and just use a little dry parsley)
10 slices bread- I use Italian bread. You could also use a country white bread.
In medium bowl, combine all ingredients except bread. Mix well. Butter one side of each bread slice. Spread 1/2 c. filling on slice of bread. Grill sandwiches in skillet until bread is light brown and sandwich hot. Makes about 5 sandwiches.
