I LOVE breakfast for dinner! My mom used to make her mother's waffles, eggs and bacon for me all the time for dinner when I was a kid. When I couldn't think of anything to make for dinner tonight, breakfast for dinner seemed like the perfect idea, simple and delicious! It's simple because you really just need a waffle maker and some basic ingredients. Most likely, you won't have to make a run to the grocery store for anything because most of us have eggs, margarine, milk, sugar, flour, salt and baking soda handy in our kitchen at all times. So if you're in a rut with your cooking and need a little inspiration for a simple dinner, try out my Grandma's waffle recipe or if you don't have a waffle maker, you can substitute pancakes or your fave breakfast meal!
Melt 2/3 cup margarine and let cool. Beat 4 egg whites till stiff (with peaks) and moist in small bowl. Beat 4 egg yolks until creamy in large bowl. Add 2 cups milk to the beaten egg yolks. Sift (I just whisk all of these tog.) 3 cup flour, 4 tsp. baking powder, 2 tsp. sugar, and 1tsp. salt and add to the milk/egg mixture. Blend on medium speed. Add melted butter to the mixture. Only beat until blended. Fold in egg whites by hand. Bake according to your waffle iron instructions.
